Truffle or tartufo in Italian is a delicacy from mother nature found in different regions of Italy and also in Emilia Romagna. Leonardi, the producer, who works for more than three generations for the family of Manuele. This small family business is located in the valley between Modena and Bologna and is specialized in the outstanding products with pig (maiale). For this sausage (salsiccia) he uses the best parts of the back of the pigs. For the skin het uses only natural casing. The meat for the sausage is handcut with no use of additional oils. For the truffle he never uses truffle-oil or truffles from a can but only local harvested black truffles from the woods and hills near Bologna. After a few weeks drying meat turn into a tasty dry sausage with the overwhelming smell of black truffle.
